Boodles Cake
This recipe was given to me in April 2009 by a Grenville Quilter at their show held in Grateley near Andover.
Ingredients
- 1/2 lb Butter
- 1/2 lb Brown Sugar
- 1/2 lb Raisins
- 1 lb Self Raising Flour
- 1/2 Pint Milk
- 1 Slightly Rounded Teaspoon Bicarbonate of Soda
Method
- Rub the butter into the flour until the mixture resembles fine breadcrumbs.
- Mix in the sugar and the raisins.
- Put the bicarbonate of soda into the milk and mix.
- Pour the milk mixture onto the dry ingredients and stir well to combine.
- Place the mixture into a lined baking tin. I use a tin which is approx. 7.5" x 12.5" x 1.25" to make a tray bake.
- Cook for 50 minutes to 1 hour at a temperature of 180°C.
I was told by the 'Cake lady' that sometimes the fruit may sink but not to worry about it!
