Herby Tomato Soup
Ingredients
- 1 large onion, finely chopped
- 2 garlic cloves, peeled and finely chopped
- 2 tbsp olive oil
- 2 large cans good quality chopped plum tomatoes
- 3 vegetable stock cubes (I use Knorr) in 2 -3 pints of hot water
- Salt and black pepper
- 2 tsp dried thyme
- 2 tsp dried oregan
- 2tsp sugar
- 2 tbsp fresh parsley, finely chopped
- 2 -3 tbsp sundried tomatoes in olive oil (optional - but make the difference!)
Method
- Heat the olive oil in a large pan and add the onions and garlic. Sauté for 3 or 4 minutes until they are starting to caramelize.
- Add the tomatoes, stock, seasoning (I use lots of freshly ground black pepper) and dried herbs. Don’t forget the sugar, this stops the soup being too sharp.
- Cook for 20 -30 minutes, then liquidize.
- Add the fresh parsley and sun dried tomatoes and enjoy!
