Marmalade Tea Bread

Ingredients
- 200 g or 7 oz plain white flour
- 5ml or 1 tsp ground ginger
- 5ml or 1 tsp baking powder
- 50g or 2 oz light soft brown sugar
- 50g or 2 oz butter
- 60ml or 4 tbsp marmalade
- 1 egg, beaten
- 75ml or 3 tbsp milk
- 25 g or 1 oz candied peel
Method
- Grease and base line a 900 ml or 1.5 pint loaf tin.
- Sift flour, ginger and baking powder into a bowl and stir in the sugar. Rub in the butter. (or cream butter and sugar, add egg, and stir in flour and stuff - /Cherie)
- Mix the marmalade with the egg and most of the milk and add to dry ingredients. Mix to a soft dough, adding more milk if necessary.
- Turn the mixture into the prepared tin, level the surface and press the candied peel on top.
- Bake at 170°C or 325°F or gas mark 3 for about 1¼ hours, or until well risen and firm to the touch.
- Turn out onto a wire rack to cool, then serve sliced and spread with butter, preferably thick enough to leave teeth marks!
