Pineapple Cake
Ingredients
- 4 oz. Stork margarine
- 8 oz. granulated sugar
- 1 lb. mixed dried fruit
- 1 tin crushed pineapple
- 1 teaspoon bicarbonate of soda
- ½ teaspoon mixed spice
Method
- Put all the above into a saucepan and bring gently to the boil. Allow to simmer for 3 minutes; put aside to cool.
- Beat 2 eggs, and add to cooled mixture, then stir in 8 oz. self-raising flour.
- Pour into a shallow tray, approx. 9" x 12" and bake at a medium heat until risen and cooked through.
- Can be baked in a conventional deep cake tin, but for a longer time.
